- THE BRIEF -
PDX needed a bar concept worthy of the airport's reputation as one of the best in the country. Not a grab-and-go, not a generic terminal bar - a genuine craft cocktail experience with a real story behind it. The concept landed on Women in Aviation, celebrating female pioneers throughout aviation history.
- MY ROLE -
Brought in as brand and F&B consultant through Lightning Bar Collective in partnership with ChefStable. Focused on bar program development, operational systems, and supporting media - while contributing to the overall brand direction of the concept.
- THE EXECUTION -
Built the full bar program from scratch - designed to deliver genuine craft cocktail quality in an airport setting, which comes with its own operational challenges. Developed the operational systems and staff training frameworks to support consistent execution from day one. Coordinated across designers, contractors, and F&B talent to bring the concept to life on time and on budget.
- THE RESULT -
Juliett opened as one of the first craft-cocktail-driven airport bars in the country. A concept rooted in a real cultural narrative, built to a standard most airport bars don't attempt.
